1 onion 

2 garlic Cloves

1 can Tomatoes

1/2 green Pepper 

4 eggs 


1 tsp paprika

Salt & pepper


1. Saute onion in oil for 5 min then add garlic for 1 min


2. Add peppers [& seasonings] for a few min on medium heat


3. Meanwhile, dice tomatoes and add to pan, along with tinned tomatoes


4. Turn up heat and allow to bubble. Stir then reduce heat, simmer for 10 min


5. With a spoon, create four equal-sized pockets in the pan and individually crack an egg into each pocket 


6. Cover and allow eggs to poach for 10 min on low heat until cooked, then serve 

This Mediterranean dish is so good that you can eat it any time of the day and it will always leave you with a happy belly. It's basically just cooked tomatoes with eggs poached on top, enhanced by a few key necessities of course. It's a super light breakfast but if you have it for lunch or dinner, you can serve it with toasted bread on the side.
