1 small onion
1 garlic clove
1 can chickpeas
2 large tortillas
2 tsp curry powder
Spinach or kale
Salt & pepper
1. Saute onion in oil for 5 min then add garlic for 1 min
2. Add rinsed chickpeas and seasoning to pan, leave on medium heat for 15 min, stirring occasionally [add spinach/kale for the last 5 min]
3. Place onto tortillas with some optional tzatziki sauce (recipe is in our book), roll them up and serve.
Tip: You can serve this with pita bread, salad or rice.
I don't trust people who don't like chickpeas. And certainly don't trust people who don't like curry. Chickpeas are filling, nutritious and taste good with everything. You can cook these up and eat them cold later, either in a wrap or on a salad.
